When doing the cam position sensor I notice u have to take off the intake manifold, Is there any other way to do this?

Nope, but taking the intake off is pretty damn easy though.

here's a write up at ls1howto on swapping intakes. This will pretty much give you a step by step on pulling and re-installing the intake. Pretty easy job really.

I had my cam sensor replaced by my mechanic because like you, I was having starting issues. I was also having loud backfiring issues as well and he traced it down to that. As mentioned above, you do have to take the intake manifold off. Total cost if I remember was like $250 or so for everything. Just a little FYI.
