AIR removal
i'm gonna take my AIR off soon and i was wondering what all has to plugged other than the headers. and are there any tricks to getting the brackets off the back of the heads.

Just cap off the manifolds. No tricks, its pretty straight forward actually.

I don't see why it would. The AIR is only there to assist the cats on cold starts for emissions. Once its up to operating temp it turns off.

Well, the number 1 reason most people remove the AIR system is to clean up the engine bay which involves taking the pump off and removing all of the rubber hoses. If thats what you're going for, then go for it. Its also easier to change the spark plugs without the AIR and EGR because it will free up a lot of space. Taking the fuse out will only stop the whine you hear on cold starts.
If you decide to take everything out (pump & hoses) just remember to make some block-off plates for the exhaust manifolds. Also, doing this will result in a SES light. You won't lose any power, but the SES light may become annoying to you.

I believe the AIR system operates at more times than that. Some people believe that the well known F-body light flickering is the result of the AIR pump kicking on. Haven't confirmed that but if true-it would mean that the system operates alot more than at start-up. Also, by diluting the exhaust gases at times with air the heat load on the convertor is reduced,increasing the life of the convertor.
