If you haven't bought a new motor yet, I said this in your other thread.
A spun bearing and rod is an easy fix for a good machine shop. They can resize the rods and buff out the crank unless it ate it too. Far cheaper than a new engine.

But to answer your other question.
For heads get MLS gaskets. You can reuse them at least a couple of times.
Head bots - OEM are torque to yield, so after one time use toss in trash. I highly recommend ARP, you can reuse. Bolts are good for normal builds but if you are going to mod out, then studs.
Water Pump Gasket - do not use paper or graphite gasket, Use the 99 and up gasket, it is like a MLS gasket. As long as the rubber is in good condition it is reuseable. Part # 12630223 $4.49 each (Texas Speed)
Exhaust gaskets should be ok to reuse however if they are bent up or cracked then replace.
Intake Gaskets - look to see if they are still pliable (flexible) and are not stiff or brittle. If so replace.
