It feels like my traction control is stuck on and won't let me push the pedal.. plus it won't downshift and when it did let me floor it short shifted into second.. I'm thinking maybe a traction control issue? I need info!!!):

Get it checked again to see if any new codes have popped. Any other lights coming on?

You said you don't have O2 sensors, but do you still have cats?
Check this thread out. Member was having similar issues, turned out his problem was being caused by his cruise control module.

Check the MAF or hose connecting it. Seen that plenty of times.

Did you read that thread I posted above about the cruise control module? Have you tried disabling it to see if it helps any?

Yeah but its something mechanical. Cause the pedal resisted when it was off too. But it randomly just came out of it and now its fine.. its done it before and came out of it before too.. Idk what it could be.

Mine does the same thin periodically. The follow the throttle cables to the passenger front side of the engine bay. There is a round black plastic cover that pops off. There should be 3 cables attached. Bellow the three cables there are two gears. Mine will get stuck together and I'll have to pop them apart with a small flat headed screw driver... Or take the handle of the screw driver and tap on the metal part. I can send you a picture of what it looks like later if you wish.
