Random overheating
This happens when I'm just driving around the neighborhood and not really getting on it. When I start to slow down and near parking the temp gauge starts to climb. I'm guessing this is a thermostat issue but not completely sure. And help would be greatly appreciated.

Silver & Blue- 02 Camaro SS, 04 GTO
Your radiator may be clogged with debris. Take a hose and wash out the fins to see what comes out. If air can't pass through then there is little or no cooling effect. Plus it a free solution.
My ride is a 2002 Camaro SS SLP #3296 with 30k, LTH, 3" Y, CME, Frost tune, K&N, ported TB, Blackwing lid, Bellows, MSD, Denso Iridium, and 85mm MAF, Bilsteins, Eibach springs, SLP strut brace, Adj. Panhard, TA Girdle, UMI, Pro 5.0, Nitto NT555
My wife has a 2004 GTO with the rare SAP, 18" wheels, K&N Cold Air System, MSD, Ported TB, Frost tune, Denso Iridium, Flowmaster cat-back, 3200 Yank, 75k

Clean radiator with a garden hose, shooting the water from the engine compartment, toward the front of the car. Also make sure the cooling fans are coming on. Next I would check to make sure the thermostat is opening, but you say while driving at speed it runs at the correct temperature. This makes me think the fans arent working, and the t-stat is ok.

Navy Blue Metallic- 98 T/A, 00 FBVert, 78T/A
Well it is most likely due to the extreme high temps of Ft Hood area. Pushing around the upper 90's to 100's.
Check to make sure you haven't sucked up a plastic bag and airflow isn't restricted.
As long as it isn't over heating you are good. If it starts to really bug you try a 165* T-stat. It fulley opens around 170 vs the 190-195* the stock one does.

Are your fans coming on?

Fans work just fine and the radiator is newish. I'm thinking the t-stat if the new radiator didn't come with one, or the under drive pulley not moving the water pump well enough. It has been mid 90's to low 100's here lately.

Also noticed that when the needle starts to climb, revving to higher rpms while parked cause the temp to go back to normal.

While parked, start the car with the radiator cap off to see if you have a possible air lock. Also, how long has this been happening as there is an issue with the clusters spiking in the red.
