I can say that some sport bikes are not that bad to ride. I am 6'1" and just under 200 lbs and find some to just suck serious balls and others not to be that bad.
OP, that Z750 is a kick ass bike.

thats my exs dads bike.... he rides it everywhere, took it 6hrs to sturgis this last august, but he rides it all the time, and ill ride the white chopper, or ill ride my busa and him and his boy will ride his

That all depends what you put in the sport bike category. The race ready bikes like the RRs, r1, r6 gsxr 600-1000 will all have higher pegs and lower handle bars than the fz6r, f4i, gsx bikes.
Take two of my cbr 600s, the 01 f4i and 04 RR. Both are 599cc sport bikes, they look somewhat a like but the F4iI is much more comfy than the RR because the pegs are lower and the handle bars are higher.

I started with a Kawasaki ZX6 Ive had my ZX9 for ten years now, I've had my Harley Phatail for five yrs.....I'd reccomend a 600 cc and lots of testosterone restraint.

Myy friend has I think the newer version of your bike (1600) and its a pig and a half, pretty green color though. It handles "ok" at best but I can scrape the pegs on the 1800 and his 1600 VERY easy so I think they are pretty equal but the VTX engine eats the Kawi like a 2V 4.6 getting eaten by an LS1. Both like smooth corners but to me the VTX feels more planted. Both rock inverted forks and cheap ass rear shocks. VTX is heavier but on smooth roads it doesnt matter. The heft is gone after you ride it past 5mph. The Kawi ss slower than my friends 1700 cc air cooled Yamaha Warrior. lol Of the Jap bikes I would take a M109R/R2 over all of them.
