i talked to my local speed shop today and they convinced me to go with hooker headers and y pipe, they said that the hookers are thicker and more durable and they would keep the heat down in the engine bay better unless i planed on wrappen em then it really didnt matter. He quoted me 800 for the headers and the y pipe along with all the hardware to install it.

I have not really heard much on the difference between the coating for hooker compared to pacesetter, but i have heard from most that pacesetter fit the LS1 better and are easier to install. Plus pacesetter would be a couple hundred cheaper. you can also check out jet-hot Lt's and y-pipe. They have the basic design of the hooker Lt's but a thicker flange and better coating. Pacesetter are the most common for LS1's, but alot of people run hooker and jet-hot Lts and really like them. Are you planning on installing them yourself?
