I had an 88lx and I raced alot of 5.0 Camaros, they are alot closer then people think. IROCS and GTA's both could outrun 5.0 Mustangs stock for stock. People complained about the 305 because it didn't meet GM's standard for power.
A friend of mine had a 84 Berlinetta and we raced from 35 to 100 and my Mustang had two cars on Him, and it was His MOM's, he was 24 and took the car to get an oil change. He wanted to see how that 84 5.0 compared to my 88 5.0. If the 5.0 was the only option for GM guys, then there would be alot of performance parts for that, but unlike ford there were other options. This past Sunday I was at the track and LS1s were just dominating. Three different cars, 99 T/A, 99 WS6 and 01 Z28 were well into the ten's. They all had full int. and stock blocks. One of the guys had the sts and was low 10s. To try and answer Your Q., I think a stock 5.0 with a 125 shot would run with a stock LS1.

just so you know, the same parts that are available for the 350 are the same for the 305. the only difference is piston size. we could get into head chamber size. but that's a minor obstacle.

I had a 90 GT and with aluminum heads, intake, exhaust, and 3.55's and I could hang with LT1's just fine. Never tried with an LS1 before I sold it... though I was dead even and could not gain a real edge on a dude in an S500 Mercedes (300 hp).

Here is what I got to say about racing a 5.0.
I lost 2 out of 3 to a sweet, light blue trunk model, and blew the doors off a brand new 06 Supercharged Saleen, twice. How is that for "don't judge a book by its cover."
They might be old, but they still have the essentials for making a quick car. Light body, easy to mod, good chassis, and a frigging sea of cheap performance parts makes them a BIG ??????
The 94-02 F-bodies are becoming the new 5.0. I spent 12 grand total in my car, and with slicks it will be in the 7's, and it's f*ck*n HOT. If Chevy would have charged in the 17 to 21 range for a Z28 and up, the F-body prolly would not have went the way of the dinosaurs. Chevy also needed to support the aftermarket performance for those cars. The combination of lacsidaisical marketing, and overpricing, spelled DOOM for the F-body, IMO.
Now, we can get a nice, used 94-02 Z28/SS for a good price, and find that we have money LEFT OVER for mods. And we ALL know how a few good bolt-ons can morph an F-body into a destroyer.Heads 'n Cammed, Moser 12, 3.73's, Weight Reduction, 13" Brembo Kit
