stupid question
What exactly does a bigger thermostat do to improve your car? When is one needed? Sorry if that's a dumb question, but....

There's different opening temps for stats and people usually get lower stats like 180* or 160*. I'm not sure what you mean by bigger but i'm assuming you mean the different temps.
Putting a lower temp stat in will lower the motors operating temp as long as you adjust the fans to match it. If you go too cool then you'll never hit closed loop...not a good thing.
IMO lowering the motor temp to those degrees lowers fuel efficiency and doesn't necessarily mean more hp. You might see a few ponies due to less heat soak...but what you really want to do is keep the intake air charge as cool as possible...cold air is dense air and equals more power.
