5,250 (rpm) AND bust!
I've been seeing everywhere people saying that the horsepower and torque curves meet at 5,250 rpm. What if an engine can't rev that high, such as the Olds 307 code Y V8, thats horse power peaks at 3,200 rpm and torque peaks at 2,000, or some of the low revving diesels that don't rev to 5,250? Do the curves never meet, or do they actually meet at lower revs?

All Torque and horsepower curves meet at some point but what I think you are referring to is the optimum rpm to shift and that all depends on the engine and set up. Diesels have a much lower torque band then a gasoline engine and therefore must be shifted at a different RPM. Sound and feel is a good way to determine when you need to change gears.
My ride is a 2002 Camaro SS SLP #3296 with 30k, LTH, 3" Y, CME, Frost tune, K&N, ported TB, Blackwing lid, Bellows, MSD, Denso Iridium, and 85mm MAF, Bilsteins, Eibach springs, SLP strut brace, Adj. Panhard, TA Girdle, UMI, Pro 5.0, Nitto NT555
My wife has a 2004 GTO with the rare SAP, 18" wheels, K&N Cold Air System, MSD, Ported TB, Frost tune, Denso Iridium, Flowmaster cat-back, 3200 Yank, 75k

I'm referring to how just about everyone says the curves must meet at 5,250 rpm. If I remember right, the code Y 307 I had redlined at 3,800 rpm. I dont see that engine, and others that were similar in power/redline ranges making it to 5,250. Do those engines just never see thier hp/tq curves meet?

It's physics and the formula. Look up any curve for any motor and you'll see they always cross there. It's mathematically impossible for them not to.
(Torque * RPM )/5250 = HP.
If a motor does not rev to 5250, then the graph will not show them crossing.Boost gets you laid, unless your name is Jon.

Talking physics on the Board... as I recall that is not the first formula that Jon has posted. Darn engineers.
