As far as I'm concerned, deer is just an inferior meat for sausage. It's awesome in other forms, but it lacks in this.

leave the pork out....mine isn't greasy at all. Mine tends to be on the salty side if I'm not careful when mixing it due to the curing salt. When I get it mixed right it's pretty damn good.
I kinda agree with you....people are forcing it making sausage out of deer meat. It's just not that kinda meat. I'll tell ya though, a buddy of mine up north had a guy he would take his meat to and the guy would make him some different kinds of sausage. Some of that stuff he made was the best sausage I'd ever eaten period....pork included. He made some hungarian sausage that was awesome cooked on the grill. The guy died a year or two ago and his recipes went with him. Wish I had them because he definitely knew what he was doing.

yep...... I added beef suet to some of mine last year so that it would have a little fat content to it but this year my wife asked me not to add any because she likes it for the health reasons. It's waaay leaner than beef and I would almost bet you it's even better for you than chicken.

Honestly, that bigass buck I shot isn't gonna be eaten much as a meal. One hind quarter was turned into butterfly steaks, the other chunked into roast-sized pieces for jerky, the backstraps and tenderloins all cut into roast-sized pieces for jerky, and the front shoulders/whatever else were chunked up for peppersticks and canning.

the only thing that's odd about the pic is that all the deer racks are pretty uniform which makes me wonder if it isn't a place that raises venison to butcher or something. I also don't see any type of tag on any of them.

I got 3 deer and the last was 1 day before the season started here and it was a nice 8 point... of course they were all in my car. And that makes 7 for thr past year. So I can't see going out and sitting in the cold to get one... as many as I hit, you'd think I was trying.
