If you want true-duals, you'll need either and x-pipe or h-pipe. A y-pipe will give you the conventional exhaust with a single I-pipe, then a split.
As far as sound, kinda depends on your taste as 'better'. Too many variables and setups out there to say. Also depends on which mufflers you go with. Check out www.ls1sounds.com

no y pipe with duals. you dont have to het an x pipe, you can just go straight pipes back.

you will have better results (rwhp) with an H-pipe or X-pipe.

It might if inspection requires you to have cats, you might not pass, unless you somehow clamp some cats on it somewhere.

^ and if you just go with straight pipes with no crossover, each pipe will sound like an individual 4 cylinder on both sides....just won't sound right.

Definitely not...
Both my Dad's Corvette and my friends Nova have straight pipes on their cars (both are 350s) and neither sound anything like "2 inline 4 cylinders". They sound like old school Muscle cars, more raspy and lopey.
An X or H pipe will just give you a slight increase in power and sound different. On an LS1, an X-pipe will probably sound the best.
