The differences are typically in the pressure plate holding capacity, clutch disc material, marcel spring (with or without), and clutch disc hub springs.

Heavier duty clutches tend to have stiffer pressure plates, which allow for more holding capacity but at the expense of a heavier clutch pedal. They may also lack a marcel spring (cushioning spring) and center clutch disc hub springs (smoother engagement).

Stock clutches are typically organic. Higher performance clutches may be kevlar, ceramic, or sintered iron. Sintered iron friction material is typically only found in race-only clutches and does not last very long.

Higher stage clutches will have rougher engagement, stiffer pedals, and are harder to modulate, but can hold more power and torque than stock depending on the rating.

As far as Spec clutches go, the stages determine how and when the clutch will crap out. All at once or in "stages".
