The 3valve heads flow nearly as much as the 4v heads do, they just havent been put in an application from the factory making big power. Theres 3valve owners though that had made 500+ via the aftermarket. JPC Racing has a 3valver in the 9s

oh yeah... many 3Vs in the 9s and shit... but they have MAJOR MAJOR work done.
i would be hesitant. some major forging has to be done to get 500hp safely and reliable. i've heard of horror stories blowing blocks at 450 and less... let's face it, a lot of people that mod and aim at 400-500hp will want to short-cut and not do things right(expensive). I wouldn't do 500hp on a GT enging w/out forging the internals/pistons. hell... I would do that on my LS1 if I plan to get 500hp.
i'd go 4V...

Someone on another website said they know that car and it is Turboed... It sounded like it from the video. Damn sure didn't sound like any Novi 2000 I have ever heard. My buddy has an ECS Novi'd ZO-6 too. It doesn't sound like that... And the shit gets deeper...
