How I can tell if my MAF sensor is messed up?
My car is running pretty rich, I am getting bad gas milage and when I start the car it takes me a while to get it started.
Starter, battery, and plugs are fine.

check O2 sensors
Any codes? Whats your fuel pressure at?

does it do it on cold starts? If so you can rule out O2's because the car is in open loop and not using the O2's for fueling. Does the car miss at all?
unplug the sensor and see if it runs better. thats how I tell if it is bad
the PCM defaults to speed density formula which is a fail-safe for the maf sensor
If your MAF is messed up you'd be throwing codes. Your car will automatically sense that due to conflicting o2 and maf read-outs. It's possible you could have lost a solenoid, so your best bet is to just take it off the car and take a look at it. Clean it as well with electric cleaner because it'll make it more accurate since it collects dust after a while (assuming it still works). Mods? Any other symptoms?
You could also reset the PCM by disconnecting the battery for about an hour. That will let the vehicle re-learn fuel tables and all that fun stuff...
Don't think the car will turn over at all if the sensor's disconnected. A speed density program requires a MAP sensor which I don't think the LS1's have, so how would it do so?
LS1's have a map sensor....it's on the back of the intake. I ran my car speed density all last year. The OP has an LT1 though.
