If the rear gears are setup up properly, they shouldn't make very little to no noise. Is it possible that your tires are noisey? If you still think its the rear differential, then maybe you can buy a used replacement or have a more experienced shop rebuild yours

Gm makes an additive to help with the noise. Mine whined @ 26-28k. Had the dealer service it under warranty. They added it to the rear along with the new gear oil. I can't remember what it's called. But an auto parts will carry it, or they can get it for you too..

Did you adjust the amount of shims from the last set? Replacing bearings won't fix anything if preolad and backlash aren't properly adjusted.

do you mean this part?

The part you circled is the carrier, there are shims on either side that go inbetween the servce spacers that are just below the bearing caps you took off. Did you use a dial indicator then? There is also a shim needed in the pinion that you would use an arbor gauge to determine the size you would need.

Richmond gears are loud, thats how they are, but you should make sure that backlash/and all the other adjustments are spot on specially for a factory 10 bolt.
