Does anyone know if a 12.5 inch brake rotor will fit our cars?

Without any other modifications? No.
The stock LS1 brakes are 12" rotors.
The C5 brake upgrade allows you to run 13" rotors with your stock calipers (17" wheels required)
The CTS-V brake upgrade allows you to run the 14.5" rotors with the CTS-V calipers (18" wheels required...some wheels require 1/2" spacers too)
