You must have a bad thermostat, waterpump, fan relay/motor, sender, or radiator if its not cooling -- could just be be gunked up to. Find and fix the problem rather than trying to band-aide it by yanking the thermostat.

By a replacement, how does the car know when to kick on the fans w/o it?

Just to clear things up a bit.
Fans aren't activated by the T-stat. They are controlled electrically by temp sensors.
But yes, replace the T-stat.
Make sure everything works as stated above & run a 50/50 mix of coolant & distilled water.
(Distilled water is 75 cents a gallon at Walmart)
Running a car without a T-stat can actually cause it to run hotter.
T-stat opens at a specific water temp & allows very hot water into the radiator where it can get cooled down......at that same instant the cooler water that's been sitting in the radiator goes into the block to absorb heat from combustion. T-stat closes & allows the water in the radiator to begin cooling down.
Without a T-stat, the water never gets a chance to cool down sufficiently & the engine overheats.
