why would you have your fan temp set so high? I thought its good to keep the engine cool to increase performance

I've got my fan temps set pretty low and a 160 - reads just under 210 cause of the crappy gauge. You '98 guys have a working gauge, so if I noticed a significant increase in temp I'd look for something being wrong.

my temp gauge is crap, it doesn't work 99% of the time. But when it does I run at 180 so it appears. What can I do to fix it?

If the gauge isn't working I'd look at the ECT connector/wiring. If the wiring looks good try replacing the sensor, they're not expensive.
