Did you unplug it with the engine running and if so was there any change? If not then yes..reconnect it as it is not the problem

Ses light flashing while the engine is running indicates a misfire code.Do you have access to a scanner or a code reader?

my first thought was it's fuel related (no fuel pressure). I don't think a faulty MAF would cause that severe of a condition.

you need a fuel pressure gauge and there is a schader valve on the pass side of the fuel rail with a plastic cap on it,that is where you hook up the gauge.Fuel pressure should be 55-60psi with key on engine off and not drop off rapidly.
Water pump will not effect driveability, but you need to address that as well.
If fuel pressure checks out ok I'd definately either get access to atleast a code reader,or take it to a shop and atleast get it scanned.

Do you still have your cat converters on the vehicle? A plugged converter would definitely cause that kind of problem. First step is try to get a scanner to pull DTC's while the problem is happening. That will give you somewhere to start looking.

Wouldn't a plugged converter be a "gradual" problem that would become worse over time?

Seems like the OP's car ran fine one day and then ran into this the next day.

Unless part of the "honeycomb" broke off inside and is plugging it up. I've seen that many times where it's right out of left field and it happens.
