Most likely yes unless you get a tune to adjust the O2 sensors to read correctly.

Correct, the SES light will show because your rear O2 sensors will no longer be sending the correct voltage signal output showing the cats are not working properly (since they're aren't there).

Two ways to remove the SES light. Get them tuned out (most likely recommended) or purchase O2 simulators. Some people have issues with the O2 simulators though so that is why a tune is recommended.

I played this game recently and once i gutted my SLP cats i had the SES light looking at me and as per advice from these wonderful people i was assured it would not run badly or harm anything as it is just seeing a wrong "after cat" reading and a bit confused..that's all!

Equally.... when i replaced the gutted cats with a pair of hi flow cats from Race parts Direct in MO the light went out again and remains out all the time so you should be fine if you go that route!

Even messing around with a new Magnaflow muffler never bothered the light!!

High flow cats won't trip the light.

I did the ol' spark plug anti fowler trick on mine with no cats and so far ive turned about 15000 mi. and no light to date. I even drove it from central OK to St. Louis this past week with no problems.
Ashes to ashes and dust to dust, if it wasn't for fords our tools would rust

You take two spark plug anti fowlers (can be purchased at local parts stores for about $5 a pair) Drill one out to a 5/8 hole and screw it into the other non drilled one. Thread the pair into the eaxhaust and then thread the O2 into the pair. It only allows a small amount of exh. to reach the sensor so it trickt the ecu into thinking all is well. it takes one pair per O2 sensor. So far mine has worked without any issues.
