Open the coolent bleeders just incase of trapped air in the system. If that don't work replace the thermostat.

I think they all do that. If you sit in traffic for awhile, engine temp will go up. That's when I blast the heater. But when you start going, the water pump starts going faster as well, hence, the cool down.

if it gets in the 240-260 range i would definitely not drive it too much...could be bad water pump, radiator cap, or a leak somewhere in your coolant system; (ie. hole in radiator-check for coolant leak).

Did you bleed the air after putting in the coolant? And did you flush the radiator properly after draining it?

you know it could be as simple as your engine temp sensor. i replaced mine recently($25). the engine temp sensor is in the block right under the driver side exhaust manifold. if you open the hood does the heat from the motor feel excessive? if it feels normal i would have the temp checked with a handheld.
