Pics of some steaks I'm grilling tonight....suggestions?
Ok, I've grilled a zillion steaks in my lifetime, but I'm looking for something different. Usually I just sprinkle them with some kosher salt, cracked peppercorns, a sprinkle of garlic powder, and a kiss of Lea & Perrins when they go on the grill. These are 1 3/4" bone-in New York strips. Does anyone do anything special to their steaks? Maybe a homemade sauce or marinade? I COMPLETELY agree that good meat really needs nothing to make it good, but I just want to try something new. These are goingt to hit the grill at 6:30pm.

salt is used to extract flavor of other ingredients, too much salt however cancels out the effect.
take salt flakes and rub them in really well, then brush off the remaining flakes and season with pepper. use your hand and tap it in lightly. no matter what, dont puncture the steak with anything. no forks, etc... this will allow a channel for juices to fall out from and create a dry steak.
When setting up your grill, heat the grill up on one side, and use the other side to actually cook the steak. Direct heat will singe the outer layer and alter the taste. a slower longer cooking will allow the fat inside to marble and melt at the same rate as the outside...
If you must use marinade, try some italian dressingand some fresh pepercorns, put in a ziplock for 4-5hrs and then cook....
you'll know when its cooked (Medium) by iff the outside has a tint of brown to it and the sound of juices falling to the bottom have reaqched their peak.
if you like it rare, you know what to do... 3-4 minutes on each side, use a spatula to flip.
If you want some good baked potatoes, take whole potatos, put them in a fryer, whole....let them cook maybe 5 minutes, then remove, let cool so you can handle them....wrap up in aluminium foil, pour some italian marinade over them and put them on the grill on the fire side. also, sprinkle some salt, pepper, and some butter chunks in with the mariande, dont be afraid to puncture the potatoe in various places to allow the potsatoe to absord the seasoning.
some italian dressing will leak out, thats ok, the smoke will help flavor the meat when you cook it.

Instead of garlic powder, just chop up a clove or two of the real thing, mix with a 50/50 mixture of butter and olive oil, and brush on the steaks a half hour before you out them on the grill. Salt and pepper to taste.
My experience tells me for rare 1 3/4 steaks on red hot grill go seven minutes on side one and five minutes on side two. Do not flip more than once.
For medium go eight minutes on side one and seven minutes on side two.2002 Street ET Champion New England Dragway

mix together some virgin olive oil and vinegar [6 parts Olive oil: 1part vinegar] then with your hand or a brush, smear some of that on each side of the steak. [dont' kill it, just get it moist]
speckle with Rosemary, oregano, salt, pepper. Let sit room temp for 30minutes. Grill and serve with skewered Portabellas and new potatoes

Slice into the steak from the fat side towards the bone about midway
(sort of a butterfly cut ) put in crushed or minced garlic and olive oil mixture grill 6-8 min per side with salt and pepper on the outsides when you turn them.

These have a bone in them, right? Bone takes a little bit longer...
I was also factoring in steaks that have not had the opportunity to come up to temp prior to cooking. if you factor in the "sit at room temp time" I'm eating while you have not yet begun to cook.Last edited by tnthub; 10-10-2006 at 10:49 AM.

Use a bit of black pepper and a bit more Lowry's Seasoning Salt. Sear them hot 30 seconds a side to seal the fat-juice in, then grill them cooler and slowly.

deep fry 'em. Sounds crazy but my new turkey fryer has a tool for doing steaks. I had to try it and they were delicious. cooked in like 5 minutes

Rub the steaks with some extra virgin olive oil and then sprinkle some corse salt and cracked pepper on them.
Go start a huge fire on your grill so the flames are about 2 feet high. have a buddy stand on one side of the fire with the pan and throw both steaks through the fire so you buddy catches them on the other side. Sit down eat and enjoy your steaks, they come out perfect every time!
