charcoal, and to help speed things up, i marinate the meat in lighter fluid.

Gas is "Ok" for certain instances, but charcoal is better in every instance.

The parents had a gas grill... was much quicker.
im a bigger fan of charcoal because i get to play with fire and lighter fluid.. and plus steaks have a bit more flavor to them.

If you're using lighter fluid, that "better" taste, is the taste of the lighter fluid ...
I use gas with wood chips ... even got it down to where I can smoke a full brisket. Keep the temp around 205* ... low and slow, about 12 hours
