Typically on a PvP server either you keep your lvl 80 in the same area your lvling or have a buddy around to help you out. Theres lots ganking but thats half the fun for some people.

It's not bad. Occasionally you'll get ganked by a lvl 80 doing some random shit in a lower level area, but mostly you run into opposing faction players that are around the same level as you (just questing in the area like you are). I've been raiding and PvPing with the Hunter class for 2+ years collectively, so I win more often than I lose.
