    Beef Jerky.....? Eat it/Buy it/Make it

    Does anyone else make there own beef jerky?
    I used to always buy it up until a few years ago when I got a dehydrator.
    Just curious and have seen some post ? lately that I thought were much more worthless.

    Anyways I have found a new brand of pre made marinate I use as a base and just add other spices and sauces depending on my tastes for that batch. I have found that most can't handle heat!

    between deer meat and our own cows we raise n slaughter......damn good stuff

    Yeah man, I eat the shit all day. I've never tried this brand and I won't be buying it again. I did like this jack Links brand of steak cuts, But its so fucking salty ... I can't eat it without lots of beer, thats a problem at work I found out lol

    I actually prefer deer sticks, we have hunters from all over the U.S. stay with us and leave there homemade stuf, i got 3 bags of dried deer sticks in my dorm that is delicious but is so salty that I have to drink beer with it and that greatly impedes progress on homework.

    How do you keep it moist ours always ends up dry as hell? I mean its dry right off the dehydrator.

    Are you using whole muscle pieces or is it ground?
    If it is super salty than you need to change the marinate. Lot's of people use too salty of a mix on game meats trying to change the taste.

    whole muscle pieces sliced around 3/8" to 1/2" thick. we have a good taste perfected, just a bit dry. the salty ones were given to us.

    I would try slicing it thiner and making the dehydrator time less. I usually put some Italian dressing the marinate that seems to help also. But I also would Never make the cuts that thick unless I was doing them in a smoke house and not a dehydrator.

    If you got big balls try his Habanero jerky....Just don't touch it with your bare hands. It will stay with you for over a day I found out the hard way.
