Beef Jerky
Anybody here make there own beef jerky- if so what marinades do you use? I just got a dehydrater and need a good marinade for jerky. Thanks

I make deer jerky......if you try to use beef get an extremely lean cut. Everytime I've tried in the dehydrator with beef it ends up a greasy mess. If you have a gander mtn near you they have a mix called backwoods......really good stuff. I usually add some pepper and cajun to mine but it's fine just out of the package. I can't ever leave anything alone and always have to add something to it.

I made a 1 1/2 pound batch which turned out really good except my marinade wasn't the best. I understand why you mention lean meat though- one piece had some fat on the end and it turned out a bit wierd/greasy. I like cajon spices too- I will give that backwoods a try thanks.

There's an old guy that comes into my store every couple of months and gets me to slice up a whole top round into strips for him, cause he makes jerky out of it. Never asked him what he uses, but he always brings some for us. Stuff is awesome.

I scrape up road kill (only 15 pounds worth or more, otherwise dont bother), marinate it with salt, pepper, sand, road grit, glass and battery acid. I dig a hole in my back yard, fill it with fire and throw the marinated strips in there. After 15 hours I fill the hole back up with dirt. 3 hours after that, I dig them up and package them in flower print ziplocs for easy use.
And all these dicks thought they were manly eating Jack Links

Black- Murdered 2006 GMC Sierra
I make my own marinade with liquid smoke, worstershire sauce, touch of soy sauce, brown sugar, crushed red pepper, garlic. marinade for 2 days then dehydrate, every few hours i brush some more marinade on to layer flavor. Good Luck.
If you are using deer or game meat before marinating soak in beer and vinegar to remove the gamey taste for a day or so.

u can use a good ol' brine of cracked peppercorns and (spelling-->)wirsh-ter-shire sauce or teryaki, and salt.
