To shim or not to shim

I have heard so much about shimming clutch parts like the throwout bearing. What is the deal and how do you know if you need shims? One site I saw shows how to dismantle the throwout bearing and adding a shim.

Usually with new parts people don't do it. If you are unsure then you are going to have to install the clutch and take measurements with a dial caliper.

I have yet to use a shim and I'm using a Monster stg 4 clutch & flywheel with a GM slave.
