Change Gear Ratio
Not sure if this is possible, but hell, it can't hurt to try.
I know a tranny rebuild is in my future but I'd like to see if there is a way to change the gear ratios in 5th and 6th gear to help with highway cruising speeds. Since I changed the rear gear to a 3.73, 5th gear is my cruising around town gear but at highway speeds (75mph) I'm sitting around 2k RPM in 6th gear.
Anyone have any ideas?

So whats the problem?? 2000 rpm cruising speed is nothing.
3.73 gears are mild and the 6 speed you have already has a .50 6th gear in it. You could put a ton more rear gear in the car and still be plenty comfy on the highway.

I figure if I have to tear it down, why not try to improve it? I mean, I'll end up having to rebuild the motor, but should I not add a cam because the car is comfortable now? Back a few years ago I rode motorcycles and had an 03 Yamaha Road Star Warrior. There was a transmission recall and while the bike was in I went ahead and had high compression pistons and the standard Road Star 5th gear installed for better cruising RPM. Bike was POWERFUL, but those little changes made it even better. While having the rear end of my Firehawk being repaired because of the pinion bearing, I went ahead and changed the gear, added Moser bearing cap studs, and put on a nice Moser aluminum cover. I'm just looking to see if there are any "upgrades" that I can do while I have the trans out- that's all.
