Z stalling out

Okay guys i have a 95 Z a4 minor mods Borla 3IN CAT BACK, HOOKER COMPETITION headers, k&n full system, 3:73 gears,brand new trans, and just had my heads rebuilt.....

Problem is when the car is cool it runs fine, when i punch it and all, but when the temp reaches 230 the car will almost feel like its running out of gas and then it will stall. But when i start it back up it starts like nothing happened, but then i try to drive it in it almost feels like the car is runing out of gas or needs a tune...

i just put brand new ac delco platinum plugs and taylor wires so i dont think its a tune, i changed out the maf, so im stuck right now, and the car isnt throwing any codes the SES light doesnt even come on..

WHAT COULD THE PROBLEM BE?

Closed loop issue....could be MAF related for sure.....do you still have your old MAF?

yea my mechanic changed out the MAF and also unplugged my 02 sensors because they were filled with oil, which was from the old engine leaking oil through the exhaust because of the rings......

So the maf was swapped and the 02 sensors were unplugged, and its not stalling anymore its just stumbling a little...my mechanic thinks that the car just needs to be driven and to put some fuel injector and gas treatment in...because this is my first time really driving the car since the new engine/heads being rebuilt........... what do you guys think?
