If it was one of the gauges I would say a faulty sensor but since the odds of you having problems with both........I would say some type of electrical problem. Whether its a faulty wire or ground, more then likely it is something along those lines. Thats just my .02, Cutlass is the "Man" with issues like this and will more then likely chime in and give his professional opinion

when you say they "jump around", ...what kinda magnitude are you talking about? for instance my fuel guage will dance a little bit mainly when it's cold outside, or from a cold start. but it's maybe like an oscillation of about 1/16-1/8 inch on the dial or so... my temp guage seems highly "damped", meaning it just sort of rises slowly from cold start, don't see any oscillations in it at all..

Well you might have bad instrument cluster. I can't find much else in common between the temp and fuel gauge.

If you get a unit through a GM dealer, the rebuilder will set the odometer mileage to your current mileage. If you buy a used one, then it'll read whatever that car had.
But you might be able to send your used one to an authorized dealer and have them set the odometer.

Most times the cluster has to work for things like state inspections, and to submit the vehicles mileage to insure it, and so forth..
Just my .02

Its not a commonly replaced item so you will have to find out the cost on your own.

I got a problem woth my fuel gauge, too. The gauge will read full at every fill up, but more times than not, it will slowly go up and down. It sometimes goes all the way down past empty for a few seconds/minutes. Any ideas as to what is causing this?

Sounds like the beginning of a failing cluster.

For the first issue i had something similar in my Silverado and theres a Speedo guy out of Florida you can mail to and he'll fix the cluster.
Second issue with just gas gauge sounded like my failing fuel sending unit.
