my first thought was it's fuel related (no fuel pressure). I don't think a faulty MAF would cause that severe of a condition.

how would i check that and my water pump just went while i was trying to diagnose it could that be the problem??

you need a fuel pressure gauge and there is a schader valve on the pass side of the fuel rail with a plastic cap on it,that is where you hook up the gauge.Fuel pressure should be 55-60psi with key on engine off and not drop off rapidly.
Water pump will not effect driveability, but you need to address that as well.
If fuel pressure checks out ok I'd definately either get access to atleast a code reader,or take it to a shop and atleast get it scanned.

Wouldn't a plugged converter be a "gradual" problem that would become worse over time?
Seems like the OP's car ran fine one day and then ran into this the next day.

yeah but if it is the cats they wouldn't have been replaced by the cat-back..
