You're overheating for some reason. Could be a lot of things, fans not coming on, thermostat sticking, air in the system, low coolant, or even something as easy as a bad radiator cap not holding pressure.

When you shut the car off the fans should shut off too. If they keep running they're staying on cause of the overheating, unless they've been programmed to stay on after shut down with tuning.

Do you have cats on it? Partially clogged cats can cause that too...

Navy Blue Metallic- `98 Formula M6 HdTp
Mine acted similar to yours and turned out to be a stuck thermostat. (it was stuck partially open)

you're not going to see any signs of overheating as soon as it happens. Try to keep from overheating it too much before you get it fixed or you'll have warped heads and bad headgaskets on your hands

Have you got a SES light yet? As your cats start to clog up, they will cause your car to get warmer when you are not moving or are moving very slowly, then cool down normally when you get moving good. They don't just go out, it happens over time. When they finally clog up almost completely then you're overheating. I'd get to an exhaust shop ASAP before you're stranded or do some major internal damage. Where i live, they only charge $10 to check the cats out. If you're covered under the GM notice, they'll probably change them for you regardless for free. How many miles do you have on the car?
You can check your thermostat pretty easily http://www.ehow.com/how_7683_tell-cars-thermostat.html http://www.ehow.com/tips_7683.html , but I'm pretty sure you have a cat clogged...

if the heat temp needle keeps fluctuating (spelling) meaning goes up then comes back down, on and off then there may be air in the system.
if not, just change the thermo or take it out, u live in Cali it should be fine, u got pretty good weather year round. thermo is not needed in TX neither

yeah replace the thermo.. don't run wihtout it since LS1 are sensitive to that crap, I had a chevy blazer ran without it and it was fine, but LS1 are prone to heat, it will mess up your internals.
