    OEM are great but expensive.

Excellent alternative to the OEM are Raybestos Quiet Stops.
I'm using them now, NO noise, very little dust. Almost like OEM.

    Brake Pads

The stock pads from Chevy work real well. Very quiet & less noise than other Brake Pads. Make sure you have your rotors cut. They could only be cut once. There is a problem with the stock Rotors warping over a period of time.

I took Sam Strano's advice and tried the PBRs. I had no problems with the OE pads and these seem as good for less than the OEs. NO DUST!!!!!!!!!!!!

Woah! Am I right in hearing that you can only turn the stock rotors once before they're too thin to turn again?

You can turn them as many times as you want as long as they are above the minimum thickness of 1.209 F & 0.970 R.

But the more your turn them, the more they are prone to warp.

I don't turn mine. I just replace them with AutoZone Rotors.
