It varies I would say between 5-8 hours to do a swap for a first timer. People have used paint including a friend of mine. I would say you are a step ahead if you use the high temp stuff. If you want a greater result I would sand the manifold to make it smooth and give the paint a cleaner look. If you plan on going any faster for $300 you can swap your ls1 for an ls-6 intake. You will have to remove the egr or drop over $600 on an overpriced one from slp with the egr fitting. This is also a good time to remove the air system to un-clutter your bay.
This link is in the sticky of the "External Section" and has the link to ls1howto just a few posts down to tell you how to do the manifold swap. The link also shows to beware of the opsu and where it is located which ls1howto does not address.

For a beginner, worst case scenario should take you about 2 hours to pull an intake manifold. Tons of people have painted their intakes, use high temp paint like you mentioned.

Here is another link on painting intakes. This particular intake was a FAST intake but should give you some pointers as well.

The service engine(SES) light is nothing to worry about, its an annoyance more than anything, but you would need someone with the appropriate software to turn the code off for you. Search all the LSx based forums, LS6 intakes are for sale on them all the time. Probably a few for sale in our classifieds right now.

You don't need it for anything truthfully, hence the reason they stopped installing them after 2000.
As for what the EGR does, here is an explanation:
