Couple of things....a lower temp thermostat only opens at a lower temp....the motor still reaches operating temps and stays there.....in other words.....my 160f stat opens at 160f....my motor still reaches operating temps of 185-212f ( depending on the weather/city driving/AC on or off etc.)...same thing with the 180f......I would check for a few things here.....
    1. What temps are your fans coming on and going off?
    2. Do you have a air bubble in your coolant system? Burp it.
    3. Is your temp guage have a short or a faulty sending unit?
