The MAF has tiny wires in it that an electrical current runs through. It tries to hold the wires at a certain temp by varying the voltage. The incoming air cools the wires and the MAF is able to measure the volume of air by the voltage it needs to maintain the wire temperature. This works as the MAF has a known diameter and flow properties that are part of its calibration -- this is why you shouldn't modify the MAF. Any gunk or oil on the wires acts to insulate them and throws off the air/fuel. This generally results in a lean stumble as the engine is actually receiving more air than is being read by the MAF.
