Pulled this off of the smoker after 5 or 6 hours last night. How do you all like to fix yours? We did several racks of ribs and some salmon so I picked up this butt a day before the big smoke. It turned out perfect which kind of surprised me since it was my first one.

Now you're talking my language. Please tell me you use charcoal and don't take the metrosexual way out and use gas or electric.

I use lump charcoal and it's by far the best shit going. I smoked maybe 25-30 butts last year and about half that many briskets. I use Strawberry's rub and once you try it you'll see why. Once you master a boston butt try a brisket or a sirloin tip roast. A tip roast is much easier and comes out much nicer than a brisket but is more expensive. Nothing beats a correctly done brisket though. If done correctly it'll give you a tongue on.

2 butts ( one with rub ( left) and one without)

the mother of all bbq meat......I give you the brisket( rubbed).

I also have a set way of eating boston butt's. I get this real thin vinegar based marinade from back home called "Wickers". It's mostly vinegar and chili powder but has a few other seasonings in it. You chop the butt up with a cleaver and then grate raw cabbage. Make a samich with the butt and put a heap of cabbage on top and hit it with that sauce.mmmm mmmm good.

yeah me too. I waited for a day to see if it gets locked...once I saw some of the mods posting, I figured it would be a bit safe to take a look.

My recipe: Dry rub that bad boy first with equal parts of cumin, red pepper, black pepper, garlic powder, onion powder, hungarian paprika. Good stuff!

do you know the mustard trick when using a rub? Spread just regular yellow mustard onto the meat before applying your rub. It helps hold the rub on there, makes almost a crust on the meat, and has no taste after the meats cooked.

I've never experimented with many woods. I just stick to hickory usually. I used mesquite a few times but IMO it sucks as a smoking wood. I'm not that impressed with mesquite, I'll take hickory anyday.
