    I get these chops from a buddy of mine.....they're pork fat injected. Best chops I've ever had and impossible to screw them up. I do them like a beef steak. Hot sear then move them off the fire to the cool side of the grill to finish. I'd rather err on the side of medium to medium rare than to go over. Pork isn't like it used to be....you don't have to cook the shit out of it.

    i googled the infused pork chops on line can i do this, if so how?

    Not sure....you could vacuum seal it maybe? Easier for me to just get them from my buddy. Maybe check around at some meat places. Definitely worth a little work to find them. These are bone in and next level kinda good.

    Did a pork butt yesterday and brats today. Mixedsome of that pork butt into some baked beans for a side dish today. Pork butt + baked beans = money

    You had me until sweet potatoes.....can't do them. I am a fan of steamed asparagus though. This week I'm doing a load of Ribeyes from the freezer and Wednesday I'm going to smoke a couple racks of St Louis cut spare ribs.

    The asparagus I brine in boiling salt water for 5 mins, then drop in ice cold water for 2 mins. Dry them off then lay them out on a tray. Cover in olive oil and minced garlic, cover with Parmesan cheese and broil till cheese melts. It's the only way I'll eat it.

    I came across 2 German venison recipes that I may try soon.

    Brine it helps a lot. Cut off the the bottom ends where it turns white, I just cut off the non green color of the stock. Makes it softer to eat.

    We eat pretty good....alot of the pics are from gatherings so it's not just us eating all that haha. I have 2 cooks I'm doing for graduation parties the next couple weekends. Pork butts, chicken wings, ribs, and briskets

    Hash browns, Bell Peppers, Onions, Scramble Eggs, 2 types of Sausage, and Ham chunks all mixed together.
