~362
For a built and blown motor, I wouldnt go .060 over. You need as much material on the cylinder walls as possible. If you already have a block that's 30, either try for 40 over or just a hone, or scrap it and find yourself a factory bore block to start with.

Ok....the car i'm looking at is .60 over fully forged internals with a Vortech T trim. Is that a good set up?

I suppose, but I question the integrity of the block. If it isnt pushing too much power it should be ok.

Got nothing to do with the 2 bolt main. I've never actually seen an LT1 block fail at the mains, or a crankshaft break because of only 2 bolt mains. Besides, they can be converted to a splayed four bolt (corvette blocks were four bolt blocks).
When you go 60 over, the cylinder walls are fairly thin. MIght be ok for an NA motor, but I would rather have more material there. Lots of people have gone 60 over and been ok, it's just not my preference.
