Don't put too much stock into what the stock gauges tell you. They are not that accurate, the computer is reading a whole different temperature for example.
Alot of different things come into play when looking at temperature for example. Outside air temp, how long it's been running-going down the road or idling, heavy throttle or easy driving, etc. etc. Oil pressure can be as subjective also.

Your oil pressure will be at it's lowest when the engine is fully warmed up at idle. They always say a LS1 operates it's best with a fire in the belly and ice on the intake (fully warmed up and cold air going in). It has to do with the aluminum block being fully warm so the tolerances close up, amongst other things. There are others on here who do more drag racing- I'll defer to their opinions.

Many variables here son. Depends on what brand and viscosity of oil your running. Depends on brand and size of your oil filter also. But with all things even...you should be around 30-40lbs at idle ( at operating temps) and around 50lbs-60lbs at WOT. Temps should be around 190-200 depending on ambient temps and A/C on or off etc.
This is my signature. It is mine. Nobody else has one like it.
