It seems like when I hit the gas to rev the car, it takes a long time (still normal) for the engine to get back to idle. What are some things that I can do to make the car rev a lot faster?

Part of this is the weight of the flywheel. A heavier flywheel makes getting going (from a stop) easier. You could go to a lighter flywheel -- drivability might suffer a bit though.

also messing with the throttle cracker/follower tables could help it too.

yes, lighter flywheels can be usefull. But, IMO, they should not be done immediatly. The fly wheel transmitts energy back to the engine to propel it through the 3 non-power producing stokres( or 540* crank rotation.). Do as you please, but like above stated, drivablity might be comprised.
